Hey, I am Edu (Game Designer), and I can answer this one. This place is meant to emphasise the start and objective of the game. This place serves the story and explains both the relationship with the protagonist and her dead girlfriend, and the controls, teaching basic movement and camera rotation, followed by the ability to interact (the door forces you to do so), and that there's secret areas and collectibles.

Narratively speaking, why does Elizabeth start here and not inside the church?
Hello! I am Iris (Narrative writer) and, well, funny enough, in very old builds of Crimson Tale she used to start at the church in fact! But well, Elizabeth embarks on a journey filled with vengeance due to the death of her love, Christie. Since she doesn't know if this path will end with her still alive, she decided to visit the grave, gain strength and say goodbye.
